Sick and still cooking

I have been sick for the last few days, but cooking must go on. Yesterday was cold here, 58 F, so soup was in order. When one is sick chicken soup is in the books. I have not eaten solid food in a few days, even though I have made awesome meals lately.

Yesterday I decided that chicken soup would work well for my tummy and getting my family nice and warm. I started by boiling chicken breast for 3 hours in water with onions and garlic. After 3 hours of boiling, adding water, and boiling more I added chives and pepper. I then boiled it for another hour.

The chicken is falling apart by this time, I took it out and shredded it. Then added it back into the broth. I added in 2 cups of rice. After the rice is nice and soft I added 1 stick of butter. I love creamy soup.

The soup ended up very good. The kids loved it, both took seconds. Hubby loved it too. I only ate about 1/4 cup of just the broth, but that too was tasty. Tonight I hope to eat solid foods. On the menu for tonight, stuffed shells and chicken breasts.
